Theo and Ida recently learned where meat and poultry comes from. It doesn't seem to bother them. "Chicken is made out of chickens," they regularly inform me as we sit down to dinner. "Ham is made out of pigs, steak is made out of cows," etc. Thanks, guys.
Chicken Tikka Masala from Alexandra C.
We LOVE this, despite its long list of ingredients. Delicious.
part 1
1 c plain yogurt
1 T lemon juice
2 t ground cumin
1 t ground cinnamon
1/4 t cayenne pepper
1 t salt
1 t pepper
1 T minced fresh ginger
3 chicken breasts cut in bite-sized pieces
parts 2 + 3
1 T butter
1 clove garlic, minced
1/2 jalapeño pepper, minced (seed the pepper first if you want it less spicy.)
2 t ground cumin
2 t paprika
8 oz tomato sauce (or 4 oz sauce and 4 oz diced tomatoes)
1 c heavy cream
1/4 c fresh cilantro
1: In large bowl, combine all ingredients for part 1. Cover with wrap and marinate in fridge for at least an hour.
2: If grilling, thread chicken onto skewers and place on oiled grill. Grill 5 mins each side. If using stovetop, simply add chicken (discard marinade) to oiled grill pan or skillet until fully cooked.
3: Melt butter in pan over med-high heat. Sauté garlic and minced jalapeño, 1 min. Season with cumin, salt, paprika. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 mins. Add cooked chicken and simmer for 10 mins.
Serve with basmati or jasmine rice and garnish with cilantro.
If we're having people over I double the recipe. It's good to double anyway because it keeps well for leftovers.
This would be good with curried chickpeas on the side along with naan and grilled bell peppers and some kind of salad (other than the 2 different cucumber salad recipes I have tried which both failed miserably...but cucumbers just seem to go with spicy food). I am definitely in need of good side dish recipes because I tend to make the same sides over and over. Suggestions welcome, especially vegetable dishes. Steamed broccoli, for example, is to be found on our table the majority of nights per week (either that or raw baby carrots...always a hit). I also like roasting broccoli. But I should probably branch out past broccoli, even though it's the only vegetable Theo reliably likes.
Tonight I am attempting calzones with TJ's pizza dough. Surprisingly I have never made calzones. We'll see how that goes. It certainly doesn't seem complicated--put ingredients on the dough, then fold in half and pinch together--but that's never stopped me from messing recipes up in the past.

I am loving the pictures that go with these recipes. It took me a while to get the spider web one but once I did I had a good laugh.
I love Chicken Tikka Masala but haven't found a good recipe, thanks Eliza!
So glad you like this one! I love it, too, and since I didn't come up with it on my own I find myself shamelessly pushing it on people. I have not made it in over a year though because of the darned ingredients. Its either the plain yogurt or the pepper that foils me. Also, I think it is way better when you can grill the chicken.
I try to like plain yogurt but just can't. I keep my fridge stocked with it for smoothies though, so that is always on hand. Jalapeños, though...not so much. And I rarely have heavy cream either. And I often don't have chicken, for that matter. I try to keep some in my freezer but it's never there when I need it.
This recipe is complicated enough that I wouldn't use it as a "go-to" on a weeknight. I would need to plan ahead for sure. So yummy...
I LOVE indian food. This one sounds great. Another you should try is Chicken Makhani. (Chicken in a tomatoe cream sauce.) It is heaven on earth. I think I like it better than chocolate! And you can make a big batch and freeze the leftovers. All the same amount of work with more meals at the end.
