Here it is...Stake Visitors' Cake. Or should it be Stake Visitor's Cake? Anyway this cake is chocolatey but not too sweet, and hearty enough you can feel good about having a piece...or two. I'm not a cake person but I do like this cake.
In the Monrovia Ward cookbook this entry is titled "Oatmeal Cake." When I saw that I crossed it out (somewhat indignantly) and wrote the correct title.
1 cup uncooked oatmeal
1 1/2 cups boiling water
1 cup brown sugar
1 cup white sugar
1/2 cup margarine (if you have margarine...I think butter would work fine if you don't)
2 eggs, beaten
1 tsp baking soda
1/2 tsp salt
1 T cocoa
1 1/2 cups flour
1 cup chocolate chips, divided (I definitely use more than a cup)
1/2 cup chopped nuts, optional
Pour boiling water over oatmeal and let stand for 10 minutes. Add sugars, margarine/butter, and eggs; beat well. Add dry ingredients and 1/2 of chocolate chips; mix thoroughly.
Pour into greased 9x13 pan. Sprinkle nuts and remaining chocolate chips over the top. Bake at 350 for 30-40 minutes. No frosting is needed, it's so tasty.
Enjoy!

I can't wait to try it!
Ooh, sounds very tasty.
Going to make that this weekend since we have lots of family coming into town. In fact, I might make some right this minute just to "try it out." :)
I just want to give a shout out to the Davis Ward Cookbook for it's original publication. Thanks to Aunt Joan, we all enjoy this tasty treat.
Good point Phoebe. I should have mentioned that. In the original David Ward Cookbook recipe, I remember, it says "Quick to mix, doesn't need frosting, and good." Don't know why I remember that.
excuse me, DAVIS ward.
i think it should be stake visitor's cake - one visitor - one cake.
and i so love this cake!
Mmm...sounds yummy! Thanks for sharing the recipe. But I am curious about the name...why stake visitor's/visitors' cake? Is it a Mormon thing?
Yes, a Mormon thing, I think it has something to do with making the cake when visitors come for stake conference and stay with members of the local stake. I'm not totally sure on that.
That is exactly what it means - and it probably says that Eliza because it is quick to fix, doesn't need frosting and is good.
I'm trying to think of a way to include it on the cake table at Hannah and Robbie's reception.
Any other family faves we should include?? (As long as I am going to start collecting cake stands!)
I know why it says it. I just don't know why I remember a random line from a cookbook.
I still think you can cook it in a round cake pan and display it on a stand. Or slice it up and put it on plates but that isn't as pretty.
also...what if there is more than one visitor?
